Real quality cider with interest value comes from utilising quality cider apple varieties. Eating apples are classed as sweet varieties, but to achieve great complexity & interest one must turn also to bitter (tannic) and acidic varieties, of which there are few in Australia; something that I am sure will be remedied in the years to come.
Europe & Britain have hundreds of varieties of cider apple however, and hence ciders tend to vary greatly in style & have real complexity. France, England and Spain are the biggest producers.
So, why not try some of the great range of foreign ciders stocked at Harvest. They make sensational food pairings and they really do have interest value.
