This is a very crisp, dry & astringent cider, and hence it is very much a food style. It is made from the single apple variety named Dabinett, which is classed as a bittersweet variety and thus provides both the tannins & the sugars, to make a texturally dry cider that retained lovely fruit tones. It has the qualities to help it cut through fatty foods in particular, leaving the palate cleansed.
